About the experience
The art of nixtamal is an ancient custom originating in Central Mexico more than 4,000 years ago. At Maiz Molino, we honor that tradition by repeating the 12-24 hour process every single day, always featuring native Mexican corn and traditional lava rock milling equipment.
The importance of nixtamal to Mexican culture cannot be overstated and it is something our experts and artisans are very passionate about and excited to share. There is so much history of this wondrous pre-Columbian culinary technique and the beautiful biodiversity and nutrition that heirloom nixtamalized corn provides.
