Why Maíz?
Corn is 💯 representative of our Mexican culture. To defend corn is to defend the right to food, the right to remain owners of the seeds that our ancestral people have inherited us.
Native corn throughout the Americas is at risk if we don't learn and recognize the biodiversity richness that we've had for thousands of years in our lands, there is much more than those cans of yellow corn on the shelves or those hybrid white seeds that are commercially harvested each year.
Its so easy for us as consumers, we can preserve this treasure just by eating and spreading the word about non gmo heirloom artisan produced nixtamal corn in our city so small scale farmers, which we trade with can keep harvesting as many as 59 different registered varieties in México and many more in the U.S
Sopes
The sopes or pellizcadas get their name from the pinching they get to make the round and tall sides form to hold its contents, choose your guisado, grab them flat and go big.
Gorditas
Blue tlaxqueño gordita, think of it like a thick tortilla with fresh masa cut in half and filled with one of our daily guisado offerings.
Tamales
Freshly ground nixtamal corn creates our delicious masa daily. Our tamales are prepped and cooked in vapor. Daily fillings ranging from rajas to carnitas in salsa verde and beyond.
Tacos
Fresh tortillas off the grill handcrafted right in front of your eyes. Daily fillings rotated with your choice of guisado.
